Easy Healthy Black Bean Ghost Nachos for Halloween

These Lighter Black Bean Ghost Nachos are a healthier, festive Halloween snack featuring smoky roasted black beans, tangy Greek yogurt crema, and adorable mozzarella ghosts. Ready in under 30 minutes, they’re perfect for parties or a fun weeknight dinner.

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1/2 cup plain Greek yogurt (full-fat or 2%)
  • 1 tablespoon lime juice
  • 1/4 teaspoon salt
  • A pinch of chili powder (optional)
  • 1 large bag (1012 oz) tortilla chips
  • 1 1/2 cups shredded Monterey Jack or mild cheddar cheese
  • 1/4 cup sliced black olives (optional)
  • 1/4 cup pickled jalapeños
  • 45 slices low-moisture mozzarella cheese
  • 1/2 cup fresh pico de gallo or salsa
  • 1/4 cup fresh cilantro, chopped
  • 1 avocado, diced
  • Lime wedges for serving

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
  2. In a small bowl, toss the drained and rinsed black beans with 1 tablespoon olive oil, 1 teaspoon smoked paprika, 1/2 teaspoon cumin, 1/4 teaspoon garlic powder, and a pinch of salt and pepper. Spread them in a single layer on one half of the prepared baking sheet. Roast for 10 minutes, shaking the pan halfway through.
  3. While the beans roast, whisk together 1/2 cup Greek yogurt, 1 tablespoon lime juice, 1/4 teaspoon salt, and a pinch of chili powder in a small bowl. Set aside.
  4. Lay out the mozzarella slices on a cutting board. Use a ghost-shaped cookie cutter to press out shapes. You’ll get about 2 ghosts per slice.
  5. Remove the roasted beans from the oven. Push them to one side of the pan, then spread the tortilla chips in an even layer on the other side. Sprinkle the shredded Monterey Jack cheese evenly over the chips. Scatter the roasted black beans on top of the cheese. Add the sliced olives and pickled jalapeños if using.
  6. Place the mozzarella ghosts gently on top of the nacho pile, spacing them out.
  7. Return the baking sheet to the oven and bake for 5-7 minutes, until the cheese is melted and bubbly and the chips are golden at the edges.
  8. Remove from the oven. Drizzle the yogurt crema over the top in a zigzag pattern. Sprinkle with fresh cilantro, diced avocado, and spoonfuls of pico de gallo. Serve immediately with lime wedges on the side.

Don’t skip roasting the beans—it concentrates flavor and prevents sogginess. Layer cheese first, then beans, to keep chips crispy. Watch the mozzarella ghosts closely as they can brown quickly. For best results, use sturdy tortilla chips like Juanita’s or restaurant-style.
