  • 1 packet taco seasoning (e.g., McCormick)
  • 1/2 cup water
  • 1 large bag (13 oz) restaurant-style tortilla chips
  • 1 can (15 oz) black beans, drained and rinsed
  • 2 cups shredded Mexican blend cheese (or cheddar and Monterey Jack)
  • 1/2 cup pickled jalapeños (optional)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup sour cream
  • 1/2 cup guacamole
  • 1/4 cup sliced black olives
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup sliced green onions
  • 1 lime, cut into wedges

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium-high heat, cook the ground beef until browned, about 5-7 minutes. Drain excess fat.
  3. Add taco seasoning and 1/2 cup water to the beef. Stir and simmer for 2-3 minutes until thickened. Remove from heat.
  4. On a large sheet pan, arrange tortilla chips in a rough football shape, layering to avoid bare spots.
  5. Scatter the drained black beans evenly over the chips.
  6. Spoon the seasoned ground beef over the chips and beans, distributing evenly.
  7. Sprinkle shredded cheese over the top, then scatter pickled jalapeños over the cheese.
  8. Bake for 8-10 minutes, until cheese is melted and bubbly.
  9. Remove from oven. Dollop sour cream and guacamole in small piles. Sprinkle tomatoes, olives, cilantro, and green onions. Squeeze lime wedges over everything.
  10. Serve immediately.

Notes

Don’t overload the chips to prevent sogginess. Layer beans and meat under the cheese. Use room temperature sour cream. Watch the bake time to avoid burning chips. Can prep toppings and cook beef in advance.
