Instructions

  1. Sauté the aromatics: Heat olive oil in a Dutch oven over medium heat. Add diced onion and cook 3-4 minutes until soft. Add minced garlic, dried oregano, and red pepper flakes (if using); cook 30 seconds until fragrant.
  2. Add sun-dried tomatoes: Stir in chopped sun-dried tomatoes and cook for 1 minute to release flavor.
  3. Build the broth: Sprinkle flour over the mixture and stir constantly for 1 minute. Slowly pour in chicken broth while stirring to prevent lumps. Bring to a gentle simmer.
  4. Cook the chicken: Season chicken breasts with salt and pepper. Nestle into simmering broth. Cover, reduce heat to medium-low, and cook 12-15 minutes until internal temperature reaches 165°F.
