  • 1/2 cup mandarin orange segments (canned or fresh, drained)
  • 2 tablespoons mini chocolate chips
  • 12 small pretzel stick pieces (about 1/2 inch each)
  • 1 tablespoon green sprinkles or shredded coconut tinted green
  • 1 pinch cinnamon (optional)

Instructions

  1. Set up your workstation. Place the mini waffle cones in the cups of a standard 12-cup muffin tin, making sure they stand straight.
  2. Make the pumpkin filling. In a small mixing bowl, combine 1 cup Greek yogurt, 1 teaspoon honey, a splash of vanilla extract, and a pinch of cinnamon (if using). Add 2-3 drops of orange food coloring and stir until the color is uniform and bright orange.
  3. Prep the toppings. Drain mandarin orange segments on a paper towel and pat dry gently. Break pretzel sticks into small pieces about 1/2 inch long. Set out mini chocolate chips and green sprinkles in small bowls.
  4. Fill the cones. Spoon the orange yogurt mixture into a piping bag or zip-top bag. Snip off a small corner (about 1/4-inch opening). Pipe the yogurt into each cone, filling them about three-quarters full.
  5. Add the toppings. Place 2-3 mandarin orange segments on top of the yogurt in each cone. Sprinkle a few mini chocolate chips around them. Add a small piece of pretzel stick in the center to mimic the stem. Finish with a pinch of green sprinkles or tinted coconut for the vine effect.
  6. Chill and set. Place the muffin tin in the refrigerator for at least 20 minutes to firm up the yogurt and meld the flavors. If serving later, cover loosely with plastic wrap and refrigerate for up to 4 hours.
  7. Serve and enjoy. Remove the cones from the muffin tin carefully. Arrange on a platter or serve directly from the tin.

Notes

Don’t overfill the cones—fill to about three-quarters full. Drain fruit thoroughly to prevent sogginess. Work in batches if making for a large group. Cones are best assembled within an hour of serving. Keep extra cones and yogurt on hand for seconds.
