Instructions

  1. Line a 9×13 inch baking pan with wax or parchment paper. Have star cookie cutters and sprinkles ready.
  2. Melt 3 tbsp unsalted butter and 10 oz marshmallows in a microwave-safe bowl in 30-second intervals, stirring until smooth. Alternatively, melt in a saucepan over low heat.
  3. Stir in 1 tsp vanilla extract if using. Divide the marshmallow mixture into three bowls and color one red, one blue, and leave one plain white using food coloring gels.
  4. Add 2 cups Rice Krispies cereal to each colored marshmallow mixture and stir gently to coat.
  5. Spread each colored mixture in thin layers side-by-side or in stripes on the prepared pan, pressing down evenly with a buttered spatula or wax paper.
  6. Let the layered mixture sit at room temperature for about 15 minutes to firm up slightly.
  7. Use star-shaped cookie cutters to cut out stars, greasing the cutter if needed for clean edges.
  8. Decorate stars with sprinkles or edible glitter while still sticky. Let stars set for another 30 minutes before serving.
