Instructions

  1. In a large mixing bowl, combine ½ cup creamy peanut butter, ⅓ cup honey, and 1 teaspoon vanilla extract. Stir until smooth and well combined.
  2. Add 1 cup rolled oats, 2 tablespoons ground flaxseed, and a pinch of salt. Stir until the oats are evenly coated. The mixture will be thick and sticky.
  3. Let the mixture rest for 5 minutes to allow the oats to absorb moisture, making the bites softer and easier to roll.
  4. Fold in ¼ cup mini chocolate chips until evenly distributed.
  5. Check the consistency: the mixture should hold together when pressed between your fingers. If too dry, add a teaspoon of honey or a splash of milk. If too sticky, add a tablespoon of oats.
