  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon ground cinnamon
  • 2 teaspoons pure vanilla extract
  • ½ teaspoon kosher salt
  • 2 tablespoons unsalted butter, melted (for greasing dish and brushing top)
  • For the Streusel Topping (optional):
  • ½ cup (60g) all-purpose flour
  • ¼ cup (50g) packed brown sugar
  • ¼ cup (20g) old-fashioned oats
  • 3 tablespoons (42g) cold unsalted butter, cut into small cubes
  • ½ teaspoon ground cinnamon

Instructions

  1. Prepare the bread: Cut day-old bread into 1-inch cubes (about 8-9 cups). If bread is not stale, spread on a baking sheet and let sit for 30 minutes.
  2. Make the pumpkin custard: In a large mixing bowl, whisk 6 eggs until frothy. Add pumpkin puree, whole milk, heavy cream, brown sugar, granulated sugar, pumpkin pie spice, cinnamon, vanilla extract, and salt. Whisk until smooth and fully combined.
  3. Assemble the bake: Grease a 9×13-inch baking dish with 1 tablespoon melted butter. Spread bread cubes evenly in the dish. Pour custard over bread, pressing gently with a spatula to help absorption. Cover tightly with plastic wrap or foil and refrigerate for at least 6 hours or overnight.
  4. Make the streusel (optional): In a small bowl, combine flour, brown sugar, oats, and cinnamon. Add cold cubed butter and cut in with a pastry cutter or fork until mixture resembles coarse sand with pea-sized butter pieces. Refrigerate until ready to bake.
