This easy pumpkin cream cold foam recipe is the perfect fall drink, made with simple ingredients and ready in just 5 minutes. It’s thick, creamy, and tastes like pumpkin pie in a glass.

  • ¼ cup (60 ml) heavy cream
  • 2 tablespoons (30 ml) whole milk
  • 1½ tablespoons (22 ml) pumpkin puree (100% pure, not pie filling)
  • 1 tablespoon (15 ml) vanilla syrup
  • ¼ teaspoon pumpkin pie spice
  • a pinch of salt
  • 1 teaspoon brown sugar (optional)
  • 1 cup (240 ml) cold brew or strong coffee (for serving)

Instructions

  1. Chill your small bowl and heavy cream in the freezer for 5 minutes. Meanwhile, brew your coffee or pour cold brew over ice.
  2. In the chilled bowl, combine heavy cream, whole milk, and vanilla syrup. Stir gently with a spoon.
  3. Add pumpkin puree, pumpkin pie spice, salt, and brown sugar (if using). Stir until mostly incorporated.
  4. Using a handheld milk frother, froth the mixture just below the surface for 20-30 seconds, moving in slow circles, until doubled in volume and soft peaks form.
  5. Check consistency: the foam should be thick enough to sit on top of coffee without immediately dissolving.
  6. Hold a spoon upside down just above the surface of your coffee and slowly pour the foam over the back of the spoon to create layers.
  7. Let the foam settle for about 10 seconds, then sprinkle a tiny pinch of pumpkin pie spice on top. Serve immediately.

Notes

For best results, use cold cream and a chilled bowl. Don’t over-froth—stop when soft peaks form. The foam is best enjoyed immediately, within 10-15 minutes. For a dairy-free version, substitute full-fat coconut cream and oat milk. To make ahead, mix the ingredients (without frothing) up to 24 hours in advance and froth fresh when ready.
