  • 3 large eggs
  • 1 cup granulated sugar

  • 1 box (15.25 oz) yellow cake mix
  • 1 cup unsalted butter, melted
  • 1 cup chopped pecans

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or nonstick spray.
  2. Make the pumpkin filling: In a large bowl, whisk together the pumpkin puree, evaporated milk, eggs, granulated sugar, pumpkin pie spice, cinnamon, and salt until smooth and fully combined.
  3. Pour the filling into the prepared dish and spread it into an even layer.
  4. Make the pecan streusel topping: In a separate small bowl, combine the dry yellow cake mix and chopped pecans. Pour the melted butter over the top and stir with a fork until the mixture forms clumps.
  5. Sprinkle the streusel evenly over the pumpkin filling. Do not press it down.
  6. Bake for 40-45 minutes, until the top is golden brown and the edges are bubbling. The center may still jiggle slightly.

Notes

For a chunkier streusel, use cold butter cut into the cake mix instead of melted butter. Let the cake cool completely for cleaner slices. Toast pecans first for extra flavor. If the streusel browns too quickly, tent with foil.
