A quick and easy flatbread topped with sweet figs, salty prosciutto, creamy mozzarella, and a tangy balsamic glaze. Perfect for a light dinner or impressive appetizer.

Ingredients

Scale
  • 2 large flatbread or naan bread
  • 2 tablespoons olive oil
  • 8 ounces fresh mozzarella cheese, sliced or torn
  • 68 fresh figs, stemmed and sliced into quarters or thin rounds
  • 46 thin slices prosciutto, torn into strips
  • 1 tablespoon fresh thyme leaves
  • 23 tablespoons balsamic glaze
  • Pinch of flaky sea salt
  • Handful of fresh arugula (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). If using a pizza stone, place it in the oven while preheating.
  2. Wash and dry the figs. Trim off the hard stem end, then slice each fig into quarters or thin rounds.
  3. Tear each slice of prosciutto into 2-3 strips.
  4. Place the flatbread or naan on a parchment-lined baking sheet (or preheated pizza stone). Brush each piece lightly with olive oil, covering the edges.
  5. Distribute the torn or sliced mozzarella evenly over the flatbread, leaving a small border around the edges.
  6. Place the fig pieces evenly over the cheese, pressing them down slightly.
  7. Scatter the torn prosciutto strips over the figs.
  8. Sprinkle the fresh thyme leaves evenly over the top.
  9. Bake for 12-15 minutes, or until the cheese is melted and bubbly, the edges are golden brown, and the prosciutto is starting to crisp up.
  10. Remove from the oven and let cool on the baking sheet for 2 minutes.
  11. Drizzle the balsamic glaze generously over the top.
  12. If using, scatter a handful of fresh arugula over the top.
  13. Slice into wedges or rectangles, sprinkle with flaky sea salt, and serve warm.

Notes

For a crispier bottom crust, preheat the baking sheet or pizza stone in the oven. Let the flatbread rest for 2 minutes before slicing to prevent the cheese from sliding off. If using dried figs, soak them in warm water for 10 minutes before slicing.
