Easy Slow Cooker Beer Cheese Football Dip

This velvety, perfectly melted beer cheese dip is made in the slow cooker with no scorching, no constant stirring, and no stress. It’s the ultimate game day appetizer that stays warm for hours and is guaranteed to be a crowd-pleaser.

  • 16 ounces sharp cheddar cheese, shredded (about 4 cups)
  • 8 ounces cream cheese, softened
  • 12 ounces beer (pale ale, lager, or pilsner)
  • ¼ cup whole milk
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika (smoked paprika optional)
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon cornstarch (optional, for thickening)

Instructions

  1. Shred the sharp cheddar cheese on the large holes of a box grater to get about 4 cups loosely packed.
  2. Soften the cream cheese by letting it sit at room temperature for 30 minutes or microwaving for 15-20 seconds.
  3. Combine the shredded cheddar, softened cream cheese, beer, milk, Dijon mustard, Worcestershire sauce, garlic powder, onion powder, paprika, salt, and pepper in the slow cooker. Stir well with a rubber spatula.
  4. Cover and cook on LOW for 2 hours. Do not cook on HIGH.
  5. After 1 hour, stir the dip well, scraping down the sides of the slow cooker.
  6. After 2 hours, check the consistency. If too thin, mix 1 tablespoon cornstarch with 2 tablespoons cold water, stir into the dip, and cook for another 15-20 minutes until thickened.
  7. Taste and adjust seasoning with additional salt, garlic powder, or hot sauce if desired.
  8. Switch the slow cooker to the WARM setting for serving. If the dip thickens too much, stir in a splash of warm milk.

Notes

Shred your own cheese from a block for the smoothest texture. Use a pale ale, lager, or pilsner; avoid dark or light beers. Let cream cheese and beer come to room temperature for best blending. If the dip separates, whisk in 1-2 tablespoons cold milk. The dip can be made a day ahead and reheated on LOW in the slow cooker.
