Easy Slow Cooker Pulled Pork Sliders with Coleslaw Recipe

This set-it-and-forget-it slow cooker pulled pork is incredibly tender, paired with a sweet-smoky homemade BBQ sauce and a tangy, crunchy coleslaw. Perfect for feeding a crowd with minimal effort.

  • 45 pounds bone-in pork shoulder (or Boston butt)
  • 1 tablespoon smoked paprika
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 cup chicken broth or water
  • 1 cup ketchup
  • 1/2 cup apple cider vinegar
  • 1/4 cup brown sugar, packed
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon yellow mustard
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1 small head green cabbage, shredded (about 4 cups)
  • 1 large carrot, grated
  • 1/2 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon celery seeds
  • Salt and pepper to taste
  • 1216 slider buns
  • Butter for toasting the buns (optional)

Instructions

  1. Pat the pork shoulder dry with paper towels. Mix smoked paprika, garlic powder, onion powder, black pepper, salt, and cayenne pepper. Rub the spice mixture all over the pork.
  2. Place the seasoned pork in the slow cooker. Pour chicken broth around the pork (not over it). Cover and cook on LOW for 8-10 hours or on HIGH for 5-6 hours until fork-tender.
  3. In a small saucepan, combine ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, yellow mustard, smoked paprika, and garlic powder. Simmer over medium heat for 5-7 minutes until slightly thickened. Set aside.
  4. In a large bowl, whisk together mayonnaise, apple cider vinegar, sugar, celery seeds, salt, and pepper. Add shredded cabbage and grated carrot, toss to coat. Refrigerate for at least 30 minutes.
  5. Once pork is cooked, transfer to a cutting board. Shred with two forks or meat claws, discarding large pieces of fat or bone.
  6. Return shredded pork to the slow cooker. Pour BBQ sauce over and toss to coat. Cook on LOW for another 20-30 minutes.
  7. Just before serving, split slider buns and butter the cut sides. Toast in a skillet over medium heat, cut-side down, for 1-2 minutes until golden.
  8. Assemble sliders: pile pulled pork on bottom bun, top with coleslaw, and place top bun on. Serve immediately.

Notes

For best results, cook on LOW for 8-10 hours. Toast the buns to prevent sogginess. Let coleslaw sit for at least 30 minutes to meld flavors. Add sauce gradually to avoid oversaucing.
