  • 2 tablespoons brown sugar (optional)
  • 23 tablespoons milk (dairy or plant-based)
  • Cinnamon-sugar mixture for coating: 1 tablespoon cinnamon + 2 tablespoons sugar

Instructions

  1. Prepare your cinnamon sugar coating by mixing 1 tablespoon cinnamon with 2 tablespoons sugar in a small bowl. Set aside.
  2. Soften the butter by letting ½ cup unsalted butter sit at room temperature until soft but not melted. Alternatively, microwave on low power for 10-15 seconds carefully.
  3. In a large bowl, whisk together 1 cup all-purpose flour, ½ cup granulated sugar, 2 teaspoons ground cinnamon, and ¼ teaspoon salt. Add 2 tablespoons brown sugar if using.
  4. Using an electric mixer or whisk, beat the softened butter and 1 teaspoon vanilla extract together until creamy and smooth, about 1-2 minutes.
  5. Gradually add the dry ingredient mixture into the butter mixture. Mix on low speed or stir with a spatula until combined; dough will be crumbly.
  6. Slowly add 2 to 3 tablespoons milk while mixing until the dough comes together into a soft, cohesive, pliable but not sticky dough.
  7. Scoop about 1 tablespoon (15 g) of dough and roll into balls between your palms. Roll each ball in the cinnamon-sugar mixture to coat evenly.
  8. Place coated dough bites on a parchment-lined baking sheet or plate and chill in the refrigerator for at least 30 minutes to firm up.
  9. Serve chilled or at room temperature, or store in an airtight container in the fridge.

Use softened butter for best texture; if dough is too sticky, add flour a teaspoon at a time; if too dry, add more milk.
