  • 1 teaspoon baking powder
  • ½ teaspoon cream of tartar
  • ¼ teaspoon fine sea salt
  • 3 tablespoons (24g) meringue powder
  • 4 cups (480g) powdered sugar
  • 6 tablespoons (90ml) warm water
  • 1 teaspoon corn syrup (optional)
  • Gel food coloring (orange, black, purple, green)
  • Sprinkles and sanding sugar (orange, black, white)
  • Candy eyes (small and large)
  • Piping bags or zip-top bags
  • Cookie cutters (ghost, bat, pumpkin, or other spooky shapes)

Instructions

  1. Cream the butter and sugar: In a large bowl, beat the softened butter and granulated sugar together on medium speed for 2-3 minutes until light and fluffy. Scrape down the sides halfway through.
  2. Add the wet ingredients: Beat in the egg, vanilla extract, and almond extract until fully combined. The mixture may look slightly curdled—that’s normal.
  3. Mix the dry ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, cream of tartar, and salt.
  4. Combine wet and dry: Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. The dough will be soft and slightly sticky. If too sticky, add another tablespoon of flour; if crumbly, add a teaspoon of milk.
  5. Chill the dough (optional but recommended): Wrap the dough in plastic wrap and refrigerate for at least 30 minutes. This makes it easier to roll out and helps the cookies hold their shape.
  6. Preheat and prepare: Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats.
  7. Roll and cut: On a lightly floured surface, roll the dough to about ¼-inch thickness. Use cookie cutters to press out shapes. Re-roll scraps only once.
  8. Bake: Place cookies about 2 inches apart on prepared sheets. Bake for 8-10 minutes, until edges are just barely golden. Centers will look slightly underdone. Let cool on baking sheet for 5 minutes, then transfer to a cooling rack. Cool completely before icing.
  9. Make the royal icing: In a medium bowl, combine meringue powder, powdered sugar, and warm water. Beat on low until combined, then increase to medium-high for 4-5 minutes until thick, glossy, and forms stiff peaks. Adjust consistency with water or powdered sugar as needed.
  10. Color the icing: Divide icing into separate bowls for each color. Add gel food coloring a tiny drop at a time and stir. For flood consistency, add water a few drops at a time until it flows like honey.
  11. Decorate: Fill piping bags or zip-top bags with colored icing. Outline each cookie first, then fill in with thinner flood icing. Use a toothpick to spread into corners. Add sprinkles and candy eyes while icing is wet. Let set for 2-3 hours (or overnight) before stacking.

Notes

The dough can be refrigerated for up to 3 days or frozen for up to 3 months. For best results, chill the dough before rolling. Royal icing consistency is key: thicker for outlining, thinner for flooding. Let icing set completely before stacking. Cookies can be stored in an airtight container at room temperature for up to 5 days. Undecorated cookies can be frozen for up to 3 months.
