  • Lettuce leaves (optional, romaine or green leaf)
  • Salt and pepper (to taste)
  • Optional add-ins: thinly sliced cucumber, bell pepper strips, or a smear of pesto or honey mustard

Instructions

  1. Soften the cream cheese: Take cream cheese out of the fridge 20 minutes before starting. Cut into cubes if in a hurry. It should be spreadable but not runny (peanut butter consistency). If forgotten, microwave for 10 seconds at 50% power.
  2. Mix the spread: In a small bowl, stir softened cream cheese with a pinch of salt and a few grinds of black pepper. Optionally add a teaspoon of dried dill or everything bagel seasoning. Set aside.

  7. Add any extras: If using lettuce, pat completely dry and lay a single layer over the cheese. Add cucumber slices or bell pepper strips if desired. Don’t overstuff.
  8. Roll it up tight: Starting from one edge, roll the tortilla as tightly as possible without tearing. Use fingers to keep filling tucked in. Press down gently to seal at the end.
  9. Wrap and chill: Wrap the rolled tortilla tightly in plastic wrap or wax paper, twisting ends like a candy wrapper. Refrigerate for at least 30 minutes (or freeze for 10 minutes if short on time).
  10. Slice and serve: Unwrap chilled roll and place on cutting board. Using a serrated knife, slice into 1-inch rounds with a gentle sawing motion. You should get about 6-8 pinwheels per tortilla.

Cold cream cheese will tear tortillas—always soften first. Chilling is non-negotiable for clean slices. Use a sawing motion when slicing to avoid squishing layers. These are better the next day as flavors meld. For gluten-free, use corn tortillas or certified gluten-free wraps. For low-carb, use large lettuce leaves or low-carb tortillas.
