  • 2 ¼ cups (280g) all-purpose flour
  • 1 packet (2 ¼ teaspoons) active dry yeast
  • ¾ cup (180ml) warm water (110°F)
  • 1 tablespoon granulated sugar
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon salt
  • ¼ cup baking soda (for water bath)
  • 4 cups water (for bath)
  • 1 large egg, beaten with 1 tablespoon water (egg wash)
  • 2 tablespoons coarse pretzel salt
  • About 30 almond slivers

Instructions

  1. Activate the yeast: In a large mixing bowl, combine warm water (110°F) and sugar. Sprinkle yeast on top and let sit for 5 minutes until foamy.
  2. Make the dough: Add melted butter, salt, and 1 cup flour to the yeast mixture. Stir until smooth. Gradually add remaining flour, ½ cup at a time, until a shaggy dough forms.
  3. Knead the dough: Turn dough onto a lightly floured surface and knead for about 5 minutes until smooth and elastic.
  4. Let it rest: Place dough back in bowl, cover with a clean towel, and let rest for 10 minutes.
  5. Preheat and prepare: Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper. In a large pot, bring 4 cups water to a boil, then stir in ¼ cup baking soda.
  6. Shape the fingers: Divide dough into about 30 equal pieces. Roll each into a long, thin rope about 4-5 inches long, tapered at the ends.
  7. Add the fingernails: Press one almond sliver firmly into the tip of each dough finger.
  8. Create knuckle lines: Use a sharp knife to make 2-3 shallow cuts across each finger.
  9. Boil the pretzels: Working in batches of 4-5, drop shaped fingers into boiling baking soda water. Boil for 30 seconds, flip, and boil another 30 seconds. Remove with slotted spoon and place on baking sheet.
  10. Apply egg wash: Brush each boiled pretzel with egg wash. Sprinkle with coarse pretzel salt.
  11. Bake: Bake for 12-15 minutes until deep golden brown. Let cool on baking sheet for 5 minutes, then transfer to a cooling rack.
  12. Optional final touch: Dab a tiny bit of red food coloring mixed with water at the base of the almond nail for a bloody effect.

Notes

Do not skip the baking soda bath for authentic pretzel texture. Keep dough covered while shaping to prevent drying. For best results, make all fingers roughly the same size (about 15g each).
