A spooky green Halloween punch with floating lychee-blueberry eyeballs that’s visually stunning, surprisingly simple, and crowd-pleasing. Perfect for any Halloween gathering, this punch takes about fifteen minutes to throw together and will become a tradition in your house.

  • 1 can (46 ounces) pineapple juice
  • 1 can (12 ounces) frozen lemonade concentrate, thawed
  • 1 liter lemon-lime soda (such as Sprite or 7Up)
  • 1 quart lime sherbet, softened
  • 2 cups cold water
  • 1 can (20 ounces) whole lychees in syrup, drained
  • 1 cup fresh blueberries (small ones)
  • Optional: red food coloring or beet juice for bloodshot eyeballs
  • Optional: dry ice for smoking effect (handle with caution)
  • Optional: plastic spider rings for decoration
  • Optional: green or purple food coloring to deepen color

Instructions

  1. Make the floating eyeballs: Open the can of lychees and drain them over a bowl to catch the syrup. Reserve the syrup. Rinse the lychees gently under cold water. Using a paring knife, make a small slit in the side of each lychee to create a pocket. Push a small blueberry into each slit so it sits snugly, with just the top peeking out. Place the stuffed lychees in a small bowl and refrigerate until ready to use. (Can be made up to 24 hours ahead.)
  2. Prepare the punch base: Take the lime sherbet out of the freezer and let it sit at room temperature for about 10 minutes to soften. In a large pitcher, combine the pineapple juice, thawed lemonade concentrate, and cold water. Stir until the concentrate is completely dissolved.
  3. Assemble the punch: Pour about half the punch base into a large punch bowl. Slowly add the lemon-lime soda to preserve carbonation. Stir gently with a ladle just a few turns.
  4. Add the sherbet: Using an ice cream scoop, add 6 to 8 scoops of softened lime sherbet to the punch bowl. The sherbet will start melting, creating a green color and creamy texture.
  5. Add remaining punch base and more soda as needed to fill the bowl. Taste and adjust sweetness with reserved lychee syrup or tartness with fresh lime juice if desired.
  6. Add the eyeballs: Gently drop the stuffed lychees into the punch bowl. They should float to the surface and bob around.
  7. Decorate and serve: Add plastic spider rings or other creepy decorations if using. For adults, you can add a splash of vodka or white rum to a separate batch (label clearly). Serve immediately while the sherbet is still melting.

Notes

Keep everything cold for best results. Don’t over-stir to preserve carbonation. Make extra eyeballs as everyone wants them. If using dry ice, never put it directly in the punch; use a separate container. Test eyeballs in water first to ensure blueberries stay in place. Adjust color with green food coloring if sherbet is not green enough.
