  • 1 cup strawberries, hulled and sliced
  • 1 cup blueberries
  • 1 cup kiwi, peeled and sliced
  • 1 cup mandarin orange segments (canned or fresh)
  • Optional: mint leaves for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease your 12-inch pizza pan or line a round baking sheet with parchment paper.
  2. In a bowl, whisk together 2 ¾ cups all-purpose flour, 1 teaspoon baking soda, ½ teaspoon baking powder, and ½ teaspoon salt. Set aside.
  3. In a large mixing bowl, beat 1 cup softened unsalted butter and 1 ½ cups granulated sugar with an electric mixer on medium speed until light and fluffy, about 3-4 minutes.
  4. Beat in 1 large room-temperature egg and 1 teaspoon vanilla extract until combined.
  5. Gradually add the flour mixture into the butter mixture, mixing on low speed just until incorporated. Avoid overmixing.
  6. Using your hands or a spatula, evenly press the dough onto the prepared pan, creating a slight rim around the edges. It should be about ½ inch thick.
  7. Bake for 18-22 minutes, or until the edges are golden and the center is set but still soft. The cookie will firm up as it cools.
  8. While the cookie bakes, beat 8 oz softened cream cheese, ½ cup sour cream or Greek yogurt, 1 cup powdered sugar, and 1 teaspoon vanilla extract until smooth and creamy.
  9. Remove the cookie from the oven and let it cool for about 10-15 minutes—warm, but not hot. Spread the frosting evenly over the cookie surface using a spatula.
  10. Decorate the top with sliced strawberries, blueberries, kiwi, and mandarin orange segments in a colorful pattern.
  11. Refrigerate the assembled fruit pizza for at least 30 minutes to set the frosting and allow the flavors to meld.

Notes

If dough is sticky, chill for 15 minutes before pressing into pan. Spread frosting while cookie is warm for best melding. Use ripe, firm fruit to avoid sogginess. Refrigerate before serving for easier slicing and flavor melding. Can substitute almond flour for gluten-free base and coconut cream for dairy-free frosting.
