  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and freshly ground black pepper to taste

Instructions

  1. Cut 2 pounds of boneless, skinless chicken breasts into 1-inch cubes and pat dry with paper towels.
  2. In a mixing bowl, whisk together 1/4 cup honey, 1/4 cup Dijon mustard, 2 tablespoons olive oil, 1 tablespoon apple cider vinegar, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon smoked paprika, and salt and black pepper to taste.
  3. Add the chicken cubes to the marinade, toss well to coat, cover with plastic wrap, and refrigerate for at least 30 minutes up to 2 hours.
  4. If using wooden skewers, soak them in water for 30 minutes to prevent burning. Thread the marinated chicken pieces onto the skewers, leaving small gaps between pieces.
  5. Preheat grill to medium-high heat (375°F to 400°F).
  6. Grill the skewers for 10-12 minutes, turning every 3-4 minutes, until chicken reaches an internal temperature of 165°F. Optionally baste with extra marinade during grilling.
  7. Remove skewers from grill and let rest for 5 minutes before serving.
