  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, hulled and sliced
  • 1 cup blueberries
  • 1 cup raspberries
  • Optional: 2 tablespoons apricot jam or honey (to glaze and add shine)

Instructions

  1. In a large bowl, whisk together 1 ½ cups flour, ¼ cup sugar, and ½ teaspoon salt. Add the cold, cubed butter. Using a pastry cutter or your fingertips, cut the butter into the dry ingredients until the mixture resembles coarse crumbs with pea-sized bits (about 3-5 minutes).
  2. Stir in the egg yolk and 2 tablespoons cold water. Mix gently until the dough just comes together. Avoid overworking; if too dry, add another teaspoon of water.
  3. Shape the dough into a flat disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  4. Preheat oven to 375°F (190°C). Line the pizza pan with parchment paper or lightly grease.
  5. On a floured surface, roll the chilled dough into a 10-inch circle, about ¼ inch thick. Transfer to the pan, pressing edges slightly up the sides to form a shallow crust. Prick the bottom with a fork to prevent bubbles.
  6. Bake for 15-18 minutes or until golden brown and firm to the touch. Remove from oven and cool on a rack for at least 20 minutes.
  7. In a bowl, beat 8 oz softened cream cheese, ½ cup Greek yogurt, ¼ cup powdered sugar, and 1 teaspoon vanilla extract until smooth and fluffy (2-3 minutes with an electric mixer).
  8. Once the crust is fully cooled, spread the creamy mixture evenly over it, leaving a small border around the edge.
  9. Arrange the berries: create the blue square of blueberries in the upper left corner (about 1/3 of the width and height). Use sliced strawberries and raspberries to create red stripes horizontally across the remaining pizza surface, alternating with the natural crust or creamy base as white stripes. Place some small sliced strawberries within the blueberry section to mimic stars.
  10. Optional: Warm 2 tablespoons apricot jam or honey slightly and brush lightly over the berries for a shiny finish.
  11. Refrigerate the fruit pizza for at least 30 minutes to set the base and let flavors meld. Slice into wedges and serve cold.

Notes

Use cold butter to create a flaky crust. Chill dough before rolling for better texture. Blot berries if they release too much juice to prevent soggy crust. Let pizza sit at room temperature for 10 minutes before slicing to avoid cracking. For dairy-free, swap cream cheese and Greek yogurt with coconut alternatives and use gluten-free flour for crust. Frozen berries can be used if thawed and drained well.
