Fresh Patriotic Strawberry Watermelon Popsicles with Blueberry Layers

These layered fruit popsicles combine juicy watermelon, sweet strawberries, and fresh blueberries for a refreshing and festive summer treat that’s quick and easy to make.

Ingredients

  • 1 ½ cups fresh strawberries, hulled and chopped
  • 2 tablespoons fresh lemon juice
  • 12 tablespoons honey or maple syrup
  • 2 cups seedless watermelon, cubed
  • 1 tablespoon lime juice
  • 1 teaspoon sugar or sweetener (optional)
  • 1 cup fresh blueberries
  • 1 tablespoon lemon juice
  • 1 tablespoon honey (optional)
  • Water as needed for blending consistency
  • Popsicle molds and sticks

Instructions

  1. Prepare the strawberry layer: Combine strawberries, lemon juice, and honey in a blender. Blend until smooth but still slightly textured. If too thick, add a tablespoon of water. Taste and adjust sweetness. Set aside.
  2. Make the watermelon layer: Rinse the blender, then puree the watermelon cubes with lime juice and a teaspoon of sugar if needed. The watermelon should be smooth and juicy but not watery. Adjust thickness by adding water sparingly. Set aside.
  3. Blend the blueberry layer: In a clean blender, pulse blueberries with lemon juice and honey until you get a thick, slightly chunky purée to preserve some texture.
  4. Layer the popsicles: Pour a spoonful of strawberry purée into each mold, filling about one-third. Freeze for 15-20 minutes until partially set but not frozen solid.
  5. Add the watermelon layer: Once the strawberry layer is firmish, pour in the watermelon purée, filling molds to about two-thirds. Freeze again for 15-20 minutes.
  6. Top with blueberry layer: Add the blueberry purée to fill the molds. Insert sticks and freeze for at least 4 hours or overnight.
  7. Unmold and serve: Run warm water briefly over the outside of the molds to release popsicles. Gently pull free and enjoy immediately.

Notes

Freeze each layer partially before adding the next to keep layers distinct. Avoid watery blends to prevent icy popsicles. Run warm water over molds briefly to unmold without breaking. Adjust sweetness based on fruit ripeness. For vegan version, substitute honey with maple syrup or agave nectar.
