Instructions

  1. Slice the watermelon on a cutting board into a 1-inch thick round slice (about 10–12 inches in diameter). Trim the rind off carefully, leaving just the juicy red flesh as the pizza crust.
  2. In a bowl, combine 1 cup plain Greek yogurt, 2 tablespoons honey, 1 teaspoon vanilla extract, and (if using) 2 tablespoons softened cream cheese. Whisk until smooth and creamy. Adjust sweetness if needed.
  3. Spread an even layer of the yogurt frosting over the watermelon slice, about 1/4-inch thick.
  4. Arrange sliced strawberries, blueberries, kiwi, and blackberries on top of the frosting in a pattern you like.
  5. Scatter fresh mint leaves over the top for garnish.
  6. Chill the watermelon fruit pizza in the fridge for 15–20 minutes before serving to let flavors meld and keep it cool.
