  • 1 cup (240g) canned pumpkin puree
  • 1/2 cup (120g) plain Greek yogurt
  • 1/3 cup (80ml) maple syrup or honey
  • 2 large eggs, room temperature
  • 1/4 cup (60ml) melted coconut oil or unsalted butter
  • 1 teaspoon vanilla extract
  • 1 1/2 cups (190g) whole wheat flour or all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons pumpkin pie spice
  • Optional: 1/3 cup (60g) chocolate chips or chopped nuts

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease it well with non-stick spray.
  2. In a large bowl, whisk together the pumpkin puree, Greek yogurt, maple syrup (or honey), eggs, melted coconut oil (or butter), and vanilla extract until smooth and well combined.
  3. In a separate medium bowl, whisk together the flour, baking soda, baking powder, salt, and pumpkin pie spice.
  4. Pour the dry ingredients into the wet ingredients. Use a rubber spatula to gently fold them together until just combined—a few lumps are fine. If adding chocolate chips or nuts, fold them in at this point.
  5. Divide the batter evenly among the 12 muffin cups, filling each about 3/4 full.
  6. Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean with just a few moist crumbs. The tops should be golden brown and spring back when lightly touched.
  7. Let the muffins cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.

Room temperature ingredients help create a tender texture. Don’t overmix the batter to avoid dense muffins. For best results, let muffins cool completely before serving. Store in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months.
