  • ⅓ cup pure maple syrup
  • ¼ cup coconut oil, melted
  • 2 large eggs, room temperature
  • ¼ cup plain Greek yogurt (full-fat or 2%)
  • 1 teaspoon vanilla extract
  • ½ cup semi-sweet chocolate chips (plus extra for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease each cup well.
  2. In a large bowl, whisk together the dry ingredients: whole wheat flour, baking soda, baking powder, pumpkin pie spice, cinnamon, and salt.
  3. In a separate medium bowl, whisk together the wet ingredients: pumpkin puree, maple syrup, melted coconut oil, eggs, Greek yogurt, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients. Use a rubber spatula to fold together gently until just combined. Do not overmix.
  5. Fold in the chocolate chips, reserving about a tablespoon for topping.
  6. Divide the batter evenly among the 12 muffin cups, filling each about ¾ full. Sprinkle reserved chocolate chips on top.
  7. Bake for 18 to 22 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. The tops should be golden and spring back when lightly touched.
  8. Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For extra tall muffin tops, let the batter rest for 10 minutes before baking. These muffins taste even better the next day as flavors meld. Store in an airtight container at room temperature for up to 3 days, or freeze individually wrapped for up to 3 months.
