A quick and easy healthy zucchini bread made with Greek yogurt for moisture and protein, perfect for clean eating and last-minute baking emergencies.

  • 2 cups grated zucchini (about 2 medium zucchinis), squeezed lightly to remove excess water
  • 1 cup Greek yogurt (plain, full-fat or low-fat)
  • 1 ½ cups whole wheat flour
  • ½ cup oat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 ½ teaspoons cinnamon
  • 1 teaspoon vanilla extract
  • 2 large eggs, room temperature
  • ⅓ cup maple syrup or honey
  • ½ teaspoon salt
  • ½ cup chopped walnuts or pecans (optional)
  • ½ cup dark chocolate chips or raisins (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×5 inch loaf pan generously or line it with parchment paper.
  2. Grate about 2 cups of zucchini and squeeze out excess moisture using a clean kitchen towel.
  3. In a large bowl, whisk together whole wheat flour, oat flour, baking soda, baking powder, cinnamon, and salt.
  4. In another bowl, beat eggs with Greek yogurt, maple syrup (or honey), and vanilla extract until smooth.
  5. Fold the grated zucchini into the wet mixture gently.
  6. Gradually add the dry ingredients to the wet zucchini mixture, folding gently with a spatula. Do not overmix.
  7. Fold in chopped nuts and/or mix-ins like dark chocolate chips or raisins if using.
  8. Pour the batter evenly into the prepared loaf pan and smooth the top.
  9. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean. Tent with foil if the top browns too quickly.
  10. Cool the bread in the pan for 10 minutes, then transfer to a cooling rack to cool completely before slicing.

Notes

Drain zucchini well to avoid soggy bread. Use room temperature eggs and yogurt for better mixing. Do not overmix batter to keep bread tender. Check leavening agents for freshness. Tent with foil if top browns too fast. Can be made gluten-free by swapping flours. Vegan version possible with flax eggs and non-dairy yogurt.
