Crispy, tangy buffalo wings with a creamy blue cheese dip that kids and adults love. The double-cook method ensures shatteringly crispy skin without deep-frying.

  • 3 pounds chicken wings, separated into drumettes and flats (about 24 pieces)
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 cup hot sauce (e.g., Frank’s RedHot)
  • 1/4 cup unsalted butter, melted
  • 1 tablespoon honey
  • 1 teaspoon Worcestershire sauce
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1/2 cup crumbled blue cheese
  • 1 tablespoon lemon juice
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons milk (to thin, if needed)

Instructions

  1. Preheat your oven to 425°F (220°C). Place a wire rack over a baking sheet and spray it lightly with cooking spray.
  2. Pat the wings completely dry with paper towels.
  3. In a large bowl, combine the baking powder, salt, pepper, garlic powder, and smoked paprika. Whisk until evenly mixed. Add the dried wings and toss well to coat every piece.
  4. Arrange the wings in a single layer on the wire rack, making sure they don’t touch. Bake for 40-45 minutes, flipping halfway through, until golden brown and crispy.
  5. While the wings bake, make the buffalo sauce. In a small saucepan over low heat, melt the butter. Whisk in the hot sauce, honey, and Worcestershire sauce. Keep warm until ready to use.
  6. For the blue cheese dip, in a medium bowl, combine the sour cream, mayonnaise, crumbled blue cheese, lemon juice, garlic powder, salt, and pepper. Stir until well mixed. If too thick, add milk a tablespoon at a time until dippable. Cover and refrigerate until serving.
  7. When the wings are done, let them rest for 5 minutes. Then transfer them to a large bowl and pour the warm buffalo sauce over them. Toss gently with tongs until every wing is coated.
  8. Serve immediately with the blue cheese dip on the side. Sprinkle extra crumbled blue cheese over the dip for presentation.

Notes

Pat wings completely dry for crispy skin. Use baking powder, not baking soda. For extra crunch, after initial bake, let wings cool 10 minutes then bake at 450°F for 5-7 minutes. Adjust sauce sweetness or heat to taste.
