One-Pan Garlic Butter Chicken Thighs Easy Dinner

Crispy-skinned chicken thighs and tender vegetables roasted in a garlic butter sauce, all on a single pan for an easy, flavorful weeknight dinner.

  • 46 bone-in, skin-on chicken thighs (about 2 pounds)
  • 4 tablespoons unsalted butter, softened
  • 6 cloves garlic, minced
  • 3 cups mixed vegetables (broccoli florets, halved Brussels sprouts, diced carrots)
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Fresh parsley for garnish
  • Lemon wedges for serving

Instructions

  1. Preheat oven to 425°F (220°C). Line a sheet pan with parchment paper or foil.
  2. In a small bowl, combine softened butter, minced garlic, dried thyme, and a pinch of salt and pepper. Set aside.
  3. Pat chicken thighs dry with paper towels. Season both sides generously with salt, pepper, and paprika.
  4. In a large bowl, toss vegetables with olive oil, salt, and pepper.
  5. Place chicken skin-side down on the prepared sheet pan, leaving space between pieces.
  6. Roast chicken for 15 minutes.
  7. Flip chicken using tongs. Scatter vegetables around the chicken in a single layer.
  8. Dollop garlic butter mixture over chicken and vegetables.
  9. Roast for another 15-20 minutes until chicken reaches 165°F (74°C) and vegetables are tender and charred.
  10. Rest for 5 minutes. Garnish with parsley and serve with lemon wedges.

Notes

Dry chicken thoroughly for crispy skin. Add garlic butter halfway through to prevent burning. Let chicken rest before serving.
