Perfect Cranberry Brie Bites: Easy Puff Pastry Appetizer

These cranberry brie bites are a quick and easy appetizer made with puff pastry, creamy brie, and tart cranberry sauce. Ready in about 25 minutes, they’re perfect for parties and holiday gatherings.

  • 1 package puff pastry sheets, thawed
  • 8 ounces brie cheese
  • ½ cup cranberry sauce (whole-berry preferred)
  • 2 sprigs fresh rosemary
  • 1 large egg
  • Flaky sea salt (optional)
  • 1 tablespoon honey (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Thaw the puff pastry according to package directions until cold but pliable.
  3. Lightly flour your work surface and roll out the puff pastry sheets to about ⅛-inch thickness.
  4. Cut the pastry into 24 squares (3 rows by 4 rows per sheet).
  5. Gently press each square into a mini muffin cup, letting the corners stick up slightly above the rim.
  6. Cut the brie into 24 small cubes (about ½ inch each), leaving the rind on.
  7. Place one cube of brie in each pastry cup.
  8. Top each with about 1 teaspoon of cranberry sauce.
  9. Whisk the egg with 1 tablespoon of water to make an egg wash. Brush gently over the exposed edges of the pastry.
  10. Bake for 12-15 minutes, until the pastry is puffed and golden brown and the cheese is bubbly.
  11. Let them cool in the pan for 5 minutes before removing.
  12. Transfer to a serving platter, sprinkle with fresh rosemary and flaky sea salt, and drizzle with honey if using. Serve warm.

Notes

For best results, use brie that is firm but gives slightly when pressed. Avoid overfilling the cups. These bites are best served within 15 minutes of baking. To make ahead, assemble without egg wash, refrigerate up to 24 hours, then brush with egg wash and bake.
