  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 3 large eggs, room temperature
  • 1 cup light brown sugar, packed
  • 1/2 cup unsalted butter, melted and slightly cooled
  • 2 tablespoons heavy cream
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 1/2 cups pecan halves, toasted

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Toast the pecans: Spread pecans evenly on a baking sheet and toast for about 7-8 minutes until fragrant and golden. Set aside to cool.
  3. Prepare the crust: In a large bowl, whisk together the flour, sugar, and salt. Cut in the cold butter using a food processor or pastry cutter until the mixture resembles coarse crumbs. Press the dough evenly into the bottom of the baking pan.
  4. Bake the crust for 15-18 minutes until it’s just starting to turn golden around the edges.
  5. Make the filling: In a medium bowl, whisk the eggs until frothy. Add brown sugar, melted butter, heavy cream, vanilla extract, and salt. Whisk until smooth and well combined.
  6. Assemble: Pour the filling evenly over the warm crust. Sprinkle the toasted pecans evenly on top, gently pressing them into the filling.
  7. Bake for 25-30 minutes or until the filling is set but still slightly jiggly in the center. The edges should be golden brown.
  8. Cool completely on a wire rack.
  9. Cut into bars about 2 inches square using a sharp knife, wiping it clean between cuts.

Use cold butter for the crust to achieve flakiness and melted butter for the filling for richness. Toast pecans to enhance nuttiness. Watch oven closely to avoid overbaking. Let bars cool completely before cutting to prevent crumbling. Use a foil-lined baking sheet under the pan to catch drips during baking.
