Perfect Garlic Herb Mashed Potato Casserole Recipe

A make-ahead mashed potato casserole with roasted garlic, fresh herbs, and a crispy golden topping. Perfect for Thanksgiving or any holiday gathering, this creamy, flavorful side dish serves 10 to 12 and can be assembled a day in advance.

  • 4 pounds Yukon Gold potatoes
  • 2 whole heads garlic
  • 1/2 cup (1 stick) unsalted butter
  • 8 ounces cream cheese, softened
  • 1 cup whole milk, warmed
  • 1/2 cup sour cream
  • 1/4 cup fresh parsley, finely chopped
  • 2 tablespoons fresh chives, chopped
  • 1 tablespoon fresh thyme leaves
  • 2 teaspoons kosher salt, plus more for water
  • 1 teaspoon freshly ground black pepper
  • 1/2 cup panko breadcrumbs
  • 1/4 cup shredded Parmesan cheese
  • 1 tablespoon melted butter (for topping)

Instructions

  1. Preheat oven to 400°F. Cut the top quarter off each garlic head to expose cloves. Drizzle with olive oil, wrap in foil, and roast for 40 to 45 minutes until soft. Let cool, then squeeze cloves into a bowl and mash with a fork.
  2. Peel potatoes and cut into 2-inch chunks. Place in a large stockpot, cover with cold water by 2 inches, and add 2 tablespoons salt. Bring to a boil, then simmer for 20 to 25 minutes until fork-tender. Drain and let sit for 2 to 3 minutes to dry.
  3. Return potatoes to the warm pot. Add butter and mash until melted and fluffy.
  4. Add cream cheese, sour cream, roasted garlic, salt, and pepper. Gently fold together. Slowly pour in warm milk while folding until smooth and creamy.
  5. Fold in parsley, chives, and thyme. Adjust seasoning if needed.
  6. Preheat oven to 375°F. Grease a 9×13-inch baking dish. Spread potato mixture evenly, creating swirls and peaks on top.
  7. In a small bowl, combine panko and Parmesan. Drizzle with 1 tablespoon melted butter and toss. Sprinkle over potatoes.
  8. Bake for 25 minutes, then switch to broil for 5 to 10 minutes until top is golden and crispy. Let rest 5 minutes before serving.

Notes

For make-ahead: assemble completely, cover tightly with foil, and refrigerate up to 2 days. Add 10-15 minutes to baking time when starting from cold. Remove foil for last 10 minutes to crisp top. Warm dairy before adding to prevent gluey texture. Don’t over-mix potatoes.
