These one-pan garlic butter chicken thighs deliver crackling golden skin and juicy, fall-apart meat with a simple cold-start technique. A quick, pantry-friendly dinner that’s perfect for busy weeknights.

  • 46 bone-in, skin-on chicken thighs (about 2 lbs / 900g)
  • 4 tablespoons unsalted butter (56g)
  • 68 cloves garlic, smashed
  • 45 sprigs fresh thyme
  • 1/2 cup low-sodium chicken broth (120ml)
  • Salt and black pepper to taste
  • Optional: baby potatoes (halved), green beans (trimmed), or asparagus spears

Instructions

  1. Preheat your oven to 400°F (200°C). Position a rack in the middle. Let chicken thighs sit at room temperature for about 15 minutes.
  2. Pat the chicken thighs incredibly dry with paper towels. Season both sides generously with salt and pepper.
  3. Place a cold oven-safe skillet on the stovetop. Add 4 tablespoons of butter to the cold pan. Arrange chicken thighs skin-side down in the cold skillet. Nestle smashed garlic cloves and fresh thyme sprigs around the chicken.
  4. Turn the heat to medium. Let the pan come up to temperature slowly for about 8-10 minutes. Do not move the chicken.
  5. After 8-10 minutes, check the skin—it should be deep golden brown and release easily. Flip each thigh using tongs.
  6. Pour in 1/2 cup of chicken broth. Scrape up any browned bits from the bottom of the pan.
  7. Transfer the skillet to the preheated oven. Roast for 25-30 minutes, or until internal temperature reaches 175°F (80°C). If adding vegetables, scatter them around the chicken during the last 15 minutes.
  8. Remove from the oven and let rest for 5 minutes. Spoon the garlic butter pan sauce over the chicken before serving.

Notes

The cold-start method is key: starting chicken skin-side down in a cold pan allows fat to render slowly for even golden crust. Pat chicken skin very dry for crispiest results. For dairy-free, substitute butter with vegan butter or ghee. Leftovers keep in refrigerator for up to 4 days; reheat in oven at 350°F for 10-15 minutes to re-crisp skin.
