  • 1 bottle champagne or prosecco (optional)
  • 2 cups fresh orange juice
  • 1 cup pomegranate seeds
  • 1 cup fresh cranberries
  • 68 cinnamon sticks
  • 46 fresh rosemary sprigs
  • 1/4 cup maple syrup or honey (optional)
  • 23 apples (Honeycrisp or Fuji), thinly sliced
  • Ice cubes (optional)
  • Optional add-ins: vanilla extract, fresh thyme sprigs, star anise, pear nectar

Instructions

  1. Chill everything: At least 2 hours before serving, refrigerate sparkling cider, champagne, and orange juice. Chill glasses if desired.
  2. Prep garnishes: Wash and dry cranberries and pomegranate seeds. Slice apples thinly (about 1/8-inch thick) and toss with a little lemon juice to prevent browning. Strip rosemary leaves from bottom inch of each sprig.
  3. Set up station: Place pitcher of sparkling cider at center. Arrange small bowls of garnishes around it. Put optional champagne and maple syrup to the side.
  4. Make base cider mix (optional): Combine 2 parts sparkling cider with 1 part orange juice in pitcher. Stir gently with a cinnamon stick.
  5. Add cinnamon and rosemary: Drop a few cinnamon sticks and rosemary sprigs into pitcher for flavor and visual appeal.
  6. Scatter berries: Toss a handful of cranberries and pomegranate seeds into pitcher.
  7. Set out glasses: Stack glasses near station. Use a tray for flutes to prevent tipping.
  8. Let guests build their own: Each person grabs a glass, adds ice if desired, drops in berries and an apple slice, then fills with cider mixture. For boozy version, do half champagne and half cider.
  9. Garnish at the end: Top each drink with a fresh rosemary sprig or cinnamon stick.
  10. Refill as needed: Keep extra cider chilling in fridge. Have a backup bottle ready.

Notes

Don’t open sparkling cider until ready to serve; it loses carbonation quickly. Pour champagne gently to preserve bubbles. Taste cider before serving; if too sweet, cut with seltzer or lemon juice. For a crowd, set up separate boozy and non-boozy stations with labels.
