  • 1 large shallot (about 60g), sliced into thin rings
  • 1/3 cup (40g) sliced almonds
  • 2 tablespoons (28g) unsalted butter
  • 2 tablespoons (30ml) olive oil
  • 1 tablespoon (15ml) fresh lemon juice
  • 1 teaspoon (5g) fine sea salt, plus more for blanching water
  • 1/4 teaspoon (0.5g) freshly ground black pepper

Instructions

  1. Prep Your Ingredients (5 minutes): Bring a large pot of water to a rolling boil. Wash and trim the green beans, snapping off the stem end. Slice the shallot into thin rings, about 1/8 inch (3mm) thick. Measure out almonds, butter, and lemon juice.
  2. Blanch the Green Beans (3 minutes): Add a generous tablespoon of salt to the boiling water. Drop in the green beans and boil for exactly 2 minutes. Prepare an ice water bath. Drain the beans and plunge them into the ice water for at least 2 minutes. Drain well and pat dry with paper towels.
  3. Fry the Crispy Shallots (5 minutes): Heat olive oil in a small skillet over medium heat. Add shallot rings in a single layer and cook for 3-4 minutes, stirring occasionally, until golden brown and crispy. Transfer to a paper towel-lined plate and sprinkle with a tiny pinch of salt.
  4. Toast the Almonds (2 minutes): In a medium skillet, melt butter over medium heat. Add sliced almonds and cook, stirring constantly, for 2-3 minutes until golden brown and fragrant. Remove from heat immediately.
  5. Combine and Finish (2 minutes): Add the blanched and dried green beans to the skillet with almonds and butter. Toss over medium heat for about 1 minute until warmed through. Add lemon juice, salt, and black pepper. Toss to coat. Taste and adjust seasoning.
  6. Serve Immediately: Transfer to a serving platter or bowl. Sprinkle crispy shallots on top. Serve right away.

Don’t skip the ice bath—it keeps beans bright green and crisp. Dry beans thoroughly after blanching. Watch shallots closely as they burn quickly. Toast almonds in butter for extra flavor. Best served immediately; shallots lose crunch over time.
