Ingredients

Scale
  • 1 round loaf sourdough or Italian bread (about 1 pound)
  • 8 ounces cream cheese, softened
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 cup frozen chopped spinach (no need to thaw)
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons sour cream (for spider web design)
  • 1 teaspoon milk (to thin sour cream for design)

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Prepare the bread bowl: Using a serrated knife, cut a thin slice (about 1/2 inch) off the top of the bread loaf. Set the top aside. Carefully cut around the inside of the bread, leaving a 1-inch wall on all sides. Scoop out the soft bread inside to create a hollow cavity. Tear the removed bread into bite-sized pieces for dipping.
  3. Make the dip base: In a medium mixing bowl, combine softened cream cheese, sour cream, and mayonnaise. Stir until smooth. Add frozen spinach, mozzarella, Parmesan, minced garlic, salt, pepper, and red pepper flakes (if using). Mix until evenly combined.
  4. Fill the bread bowl: Spoon the dip mixture into the hollowed-out bread loaf, filling evenly without packing too hard.
  5. Bake: Place the filled bread bowl on the prepared baking sheet. Bake for 20-25 minutes, until hot, bubbly, and golden on top. If desired, broil for 1-2 minutes at the end for extra browning.
  6. Add spider web design: While dip bakes, stir together 2 tablespoons sour cream and 1 teaspoon milk. Transfer to a squeeze bottle or small zip-top bag with a tiny corner snipped off. Let dip cool 2-3 minutes, then drizzle sour cream in a spiral from center outward. Use a toothpick or knife tip to drag lines from center to edges, creating a spider web pattern.
  7. Serve immediately: Place bread bowl on a platter with reserved bread pieces and optional crackers or veggie sticks.

Notes

Do not squeeze the frozen spinach; it adds moisture for creaminess. Let cream cheese soften for smooth texture. Use a sturdy bread loaf like sourdough. Add spider web design while dip is warm. For a gluten-free version, skip the bread bowl and serve in a dish with gluten-free dippers.
