A fast and easy recipe for tangy, crisp pickled red onions that add brightness and crunch to tacos, rice bowls, and more. Ready in just 30 minutes using simple pantry ingredients.

Ingredients

Scale
  • 1 large red onion, thinly sliced
  • 1 cup (240 ml) apple cider vinegar
  • 1/2 cup (120 ml) water
  • 1 to 2 tablespoons granulated sugar or honey (adjust to taste)
  • 1 teaspoon salt
  • Optional spices: pinch of black peppercorns, small dried chili, or bay leaf

Instructions

  1. Slice the onions thinly using a sharp knife into thin, even rings or half-moons (about 5 minutes).
  2. In a small saucepan, combine apple cider vinegar, water, sugar (or honey), salt, and any optional spices.
  3. Warm the mixture over medium heat just until sugar and salt dissolve, about 3-4 minutes. Avoid boiling.
  4. Transfer the sliced onions into a glass jar or heat-safe container. Pour the hot vinegar mixture over the onions, ensuring they are fully submerged.
  5. Let the jar sit uncovered until it reaches room temperature, about 15-20 minutes. Then seal the jar and refrigerate.
  6. The onions will be tangy and crisp within 30 minutes but taste better after a few hours. Keep refrigerated for up to 2 weeks.

Notes

Use fresh, firm red onions for best crispness. Avoid boiling the vinegar mixture to preserve brightness. Cool the jar before sealing to prevent soggy onions. Shake jar gently once or twice daily to redistribute flavors and maintain color. For faster pickling, chill jar in freezer for 10 minutes after pouring vinegar mixture.
