  • 4 large ripe tomatoes, sliced about 1/4 inch thick
  • 1 1/2 cups shredded Gruyère cheese (about 6 ounces)
  • 1/2 cup mayonnaise
  • 1/4 cup chopped fresh basil (about 10 leaves)
  • 1/4 cup finely chopped sweet onion or Vidalia
  • 1/2 teaspoon garlic powder
  • 1 teaspoon salt, divided
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Lay the tomato slices on a paper towel-lined baking sheet. Sprinkle with 1/2 teaspoon salt and let them sit for about 15 minutes to draw out excess moisture.
  3. Place the pie crust into a 9-inch pie dish, pressing gently to fit. Prick the bottom lightly with a fork. Brush the edges with olive oil.
  4. In a medium bowl, combine mayonnaise, shredded Gruyère, chopped basil, chopped onion, garlic powder, remaining 1/2 teaspoon salt, and black pepper. Stir until well blended.
  5. Spread half of the cheese mixture evenly over the bottom of the crust. Layer half of the tomato slices on top, then add the remaining cheese mixture. Finish by layering the rest of the tomato slices on top.
  6. Bake the pie on the middle rack for 35 to 40 minutes until the top is bubbly and golden and the crust edges are crisp and browned. Tent with foil if edges brown too quickly.
  7. Let the pie rest for at least 15 minutes on a cooling rack before slicing and serving.

Notes

Salting and draining the tomato slices is essential to prevent a soggy crust. Tent the pie with foil if the crust edges brown too quickly. Let the pie cool before slicing to avoid filling oozing. Freshly shredded Gruyère melts better than pre-shredded. Tear basil leaves gently instead of cutting for better aroma.
