  • 1 ½ pounds tomatillos, husked and rinsed
  • 1 medium white onion, quartered
  • 4 large garlic cloves, peeled
  • 3 tablespoons fresh lime juice
  • ½ cup packed fresh cilantro
  • 1 teaspoon kosher salt (plus more to taste)
  • ½ teaspoon ground cumin (optional)
  • 1 tablespoon olive oil

Instructions

  1. Preheat the broiler with an oven rack 4-6 inches from the element. Arrange tomatillos, quartered onion, garlic cloves, and Hatch chiles on a rimmed baking sheet. Drizzle with olive oil and toss to coat. Spread in a single layer.
  2. Broil for 5-7 minutes until skins blister and blacken. Flip vegetables with tongs and broil another 4-6 minutes until chiles are puffed and charred, tomatillos are soft, and garlic is golden.
  3. Transfer hot chiles to a bowl, cover tightly with plastic wrap or a towel, and steam for 10-15 minutes. Let tomatillos, onion, and garlic cool slightly on the baking sheet.
  4. Wearing gloves, rub the blackened skins off the chiles. Slice open and remove seeds and membranes (leave some seeds for more heat). Roughly chop the peeled chiles.
  5. In a blender or food processor, combine roasted tomatillos, onion, garlic, chopped chiles, lime juice, cilantro, salt, and cumin (if using). Pulse a few times, then blend on low for 15-20 seconds until slightly chunky. Adjust salt and lime to taste.
  6. For best flavor, cover and refrigerate for at least 30 minutes before serving. The salsa will thicken slightly as it sits.

Notes

For a milder salsa, remove all seeds and membranes from the chiles. For a spicier version, add rehydrated dried chipotle chiles. The salsa keeps for up to 7 days in the fridge and freezes well for up to 3 months. If using frozen roasted chiles, thaw and pat dry before using.
