  • 2 cans (15 oz each) black beans, drained and rinsed
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 tablespoons taco seasoning (homemade or store-bought)
  • 1 can (10 oz) diced tomatoes with green chiles (undrained)
  • 4 oz cream cheese, softened
  • 1 cup shredded Monterey Jack cheese
  • Salt and black pepper to taste
  • 2 large ripe avocados
  • 1/2 cup sour cream
  • 2 tablespoons fresh lime juice
  • 1/4 cup packed fresh cilantro, finely chopped
  • 1 small jalapeño, seeded and minced (optional)
  • Salt to taste
  • Tortilla chips for serving
  • Sliced black olives for garnish (optional)
  • Fresh cilantro leaves for garnish (optional)
  • Pickled jalapeño slices for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Set cream cheese out to soften.
  2. Heat olive oil in a cast iron skillet or regular skillet over medium heat. Add diced onion and cook 4-5 minutes until translucent. Add minced garlic and cook 30 seconds until fragrant.
  3. Add drained black beans and taco seasoning. Stir and cook 2 minutes to bloom spices.
  4. Add undrained diced tomatoes with green chiles and softened cream cheese in chunks. Stir continuously until cream cheese melts and mixture becomes thick and creamy, about 3-4 minutes.
  5. Season with salt and pepper to taste. Let simmer 2-3 minutes to thicken slightly. Add a splash of water or broth if too thick.
  6. Sprinkle shredded Monterey Jack cheese evenly over bean mixture. Transfer skillet to oven (or pour into a baking dish) and bake 10-12 minutes until cheese is melted and bubbly.
  7. While dip bakes, make avocado-lime cream: In a food processor, combine avocados, sour cream, lime juice, cilantro, and jalapeño (if using). Pulse until smooth and creamy. Season with salt. Add water or extra lime juice if too thick.
  8. Remove skillet from oven. Let cool 2-3 minutes. Spoon avocado-lime cream over top and spread into an even layer. Garnish with black olives, cilantro leaves, and pickled jalapeños. Serve immediately with tortilla chips.

Notes

For best results, let cream cheese soften at room temperature for 20 minutes before using. Rinse canned beans thoroughly to avoid watery dip. Make avocado cream just before serving to prevent browning. The bean layer can be made up to 2 days ahead and reheated.
