  • 1 pound ground beef (80/20 works best)
  • 1 packet taco seasoning
  • 1/4 cup beef broth
  • 8 ounces cream cheese, softened to room temperature
  • 1 cup sour cream (full fat)
  • 2 cups shredded Mexican blend cheese (or cheddar)
  • 1 cup salsa (medium heat)
  • 1/2 cup sour cream (for the web)
  • 1 can black olives, sliced
  • Optional: fresh cilantro for garnish
  • Tortilla chips (Tostitos Scoops recommended)
  • Optional: sliced jalapeños for extra heat

Instructions

  1. Brown the ground beef (8-10 minutes): Heat a large skillet over medium-high heat. Add the ground beef and break it apart with a wooden spoon. Cook until no pink remains, about 6-8 minutes. Drain off excess fat, but leave about a tablespoon for flavor. Add the beef broth and taco seasoning, stirring to combine. Let it simmer for 2-3 minutes until the liquid reduces slightly. Remove from heat and set aside to cool for 5 minutes.
  2. Soften the cream cheese (20 minutes before starting): Take the cream cheese out of the fridge and let it sit on the counter. If you forgot, microwave it in 10-second bursts until soft but not melted.
  3. Layer the cream cheese base (3 minutes): In a small bowl, mix the softened cream cheese with 1 cup of sour cream until smooth. Spread this mixture evenly across the bottom of your pie dish.
  4. Add the salsa layer (2 minutes): Spoon the salsa over the cream cheese mixture and spread gently. Don’t press too hard or you’ll mix the layers.
  5. Add the seasoned beef (3 minutes): Sprinkle the cooled beef mixture evenly over the salsa. Use your spatula to spread it out, but again, gentle hands here.
  6. Top with cheese (2 minutes): Sprinkle the shredded cheese evenly over the beef layer. Cover every bit of meat.
  7. Microwave to melt (1-2 minutes): Place the dish in the microwave for 60 seconds, just until the cheese starts to melt. Alternatively, pop it in a 350°F oven for 5-7 minutes. Let it cool for 5 minutes before adding the spiderweb.
  8. Create the spiderweb design (5 minutes): Spoon the remaining 1/2 cup sour cream into your piping bag or zip-top bag. Snip a tiny corner off. Pipe a small dot in the center of the dip. Then pipe concentric circles radiating outward, about an inch apart. Take a toothpick or a knife tip and drag it from the center outward through all the circles. Then drag from the outside inward between each web section. Wipe your toothpick clean between each drag.
  9. Add the spiders (3 minutes): For each spider, take two olive slices. Place one whole slice for the body. Cut the second slice into thin strips for legs — you want 8 legs per spider. Arrange them around the body. I usually make 3-4 spiders crawling across the web.
  10. Chill before serving (15-30 minutes): Refrigerate the dip for at least 15 minutes before serving.

Notes

Let the meat cool for at least 5 minutes before adding to cream cheese to prevent a soupy mess. Use room temperature sour cream for piping the web. For make-ahead, assemble everything except the spiderweb and olives up to 24 hours in advance; refresh the web before serving. This dip tastes even better the next day.
